Marcellise is a valley, as well as a delightful village, in the eastern part of Verona. An area that is gaining great success for its wines from Valpolicella. Great structure and expressive power. Ripasso is obtained from a particular technique that involves passing the dried and pressed grapes used to make Amarone into the Valpolicella Superiore wine from the previous vintage. By leaving it in contact and starting a light refermentation, the wine recovers all the goodness from the dried grapes, glycerol, tannin, sugars, aromas, and scents.
Typical of these lands so white with limestone and fossil marl. Excellent violet colors and aromas of sour cherries and black pepper spice. Balsamic evolutions of licorice and minty freshness. Excellent freshness and thick, well-balanced tannins. Spicy finish with a nice seductive sensation.
Alcohol 14.5% Vol.
Pairing. Excellent wine for red meats and mixed grilled dishes. Supports very aged and spiced cheeses. Spiced cold cuts, even fresh. Game birds and fur game.
