It is said that the soup arrived in France in 1533, thanks to Catherine de Medici, wife of King Henry II of Orleans. Catherine revolutionized French cuisine and brought with her some Tuscan recipes, including onion soup (the Carabaccia). French chefs at the Court of Paris reworked the Tuscan recipes. They replaced olive oil with butter and created some dishes that are still considered typical of French culinary tradition today.

Thus, onion soup, once sustenance for the poorest classes, has become a refined dish that has managed to conquer recipe books around the world.

How to cook an onion soup? Pour the contents of the jar into a saucepan. Add 150-160ml of water or better yet broth made by adding half a vegetable cube and heat it up. While the soup is heating, layer the slices of toasted bread in a casserole. When the soup boils, pour it into the casserole with the bread and enrich everything with a sprinkle of Parmigiano Reggiano or Gruyère. Resist the temptation to indulge, because the soup will tempt you, just a few more minutes. Place the casserole in the oven for about 8 or 9 minutes at 190°C and then your soup will be ready to be served. 

If you don't use all the contents of the jar, remember to close it well and store it in the refrigerator.
