Alta Langa, a well-known area of Piedmont also famous for its fine wines, is the natural homeland of an excellent variety of hazelnuts, belonging to the species Corylus Avellanae: the Tonda Gentile Trilobata, awarded the designation "Protected Geographical Indication" since 1993. Cascina Fontane produces exclusively Piedmont Hazelnuts I.G.P., which due to their distinctive properties are the most sought after by the confectionery industry, in addition to being universally considered the best in the world.
Cascina Fontane carries out the toasting using the patented method called “Vertiflow”. A jet of hot air allows the product to be suspended, rotating it on itself: this guarantees an even cooking of the hazelnuts. Moreover, these, completely dehumidified, are perfectly cooked inside for a distinctly more fragrant taste.
This process does not affect the product's flavor and cleans the fruits thoroughly, safeguarding their oily component in the final phase, that of sorting.
The hazelnuts are indeed manually selected one by one to eliminate defective ones and ensure perfection.

The hazelnut contains proteins and fats that have the peculiarity of absorbing odors. Therefore, by storing hazelnuts in the same location as odorous products, they may take on undesirable aromatic notes. The hazelnut does not only “absorb” the smell of other food items but can also “absorb” odors emanating from chemical substances or from the environments themselves.
Protect the product from humidity. Hazelnuts do not contain preservatives: their preservation depends solely on low humidity and low temperature. Light and heat promote rancidity.
