This cured meat is a unique excellence of Italy produced by the skill and creativity of the Giannelli family. It encapsulates the butchering experience of a people and their traditions with an added value of interpretation. The cut is a classic noble cut. Subsequently, the fillet of meat is sprinkled with herbs and spices marinated in Puglian white wine and finally dusted with sweet paprika that reddens the surface of the meat. Finally, the cured meat is left to age for 180 days. Completely free of preservatives, lactose-free, and gluten-free.
This is a cold cut that also reveals a beautiful softness and elegance to the touch, almost like velvet. Soft therefore and slightly spicy with a pleasantly and delicately sweet-spicy finish. Spicy with a nice balance between the salty and spicy components. An excellent cold cut for appetizers or as an entrée for lunch or dinner. Ideal on typical Apulian bread or thick crust bread baked in the oven. Pleasant with slightly aromatic white wines such as Lugana or Custoza or with some white wine from the Amalfi Coast. To be enjoyed also paired with creamy cheeses or moderately aged goat cheeses.
