This is a cheese that is supplemented during the prefermentation phase with lactic acid bacteria and natural enzymes that serve to predigest lactose. A technique that allows even cheese aged less than 30 months to be eaten by those who are lactose intolerant.

The Mantuanella cheese has a well-composed and compact texture with a moderate presence of tyrosine granules. On the palate, it is particularly creamy with a more pronounced soft perception and a special sweetness. It is an excellent cheese for appetizers or as an accompaniment for meals, pairing well with delicate peach or apricot jams and acacia honey. It goes well with not particularly important wines and especially with sparkling wines such as Valdobbiadene Prosecco DOCG.
