La Casara is located at the foothills of the Lessini Mountains among the highest hills of the Durello DOC and Soave DOC designation. White grapes for white wines. The first is produced with Durella grapes, which were once called rabiosa or cagnina due to their acidity. The Garganega for Soave, on the other hand, is an indigenous grape typical of the Verona area, the most known and the most cultivated.
With the two wines and their pomace, it aims to refine cow's milk cheese produced using the same technique as Monte Veronese DOP. It has a maturation period of 8 to 19 months. The aging in the pomace and wines entails an absorption that penetrates centripetally towards the center of the cheese, imparting typical organoleptic characteristics.
