Goat Blue 1.5 kg

The Blu di Capra from Casara is made with fine milk from Lessinia goats. A goat cheese that, to become moldy, is added with the mycelium of Penicillium Roqueforti which will produce the typical mold phenomenon.

The cheese is aged for about 60-90 days during which the mass becomes creamy and pleasantly sweet and tangy, with a nice aromaticity.

Goat Blue 1.5 kg: use in the kitchen

The Blu di Capra in a 1.5kg portion is spectacular to taste on a tile of yellow polenta or taragna from Valtellina, or in combination with various jams, mustards, and honeys. It is interesting with risottos. It pairs well with soft wines with a sweet finish, such as a Passito or a Recioto di Soave DOCG.


Tasting


It is the perfect synthesis of a delicate flavor, the result of a careful balance between the characteristic taste of goat milk and the perfumed note of the blue veins, and important nutritional characteristics: high digestibility, low cholesterol content, and an excellent source of proteins and calcium. With a compact paste, ivory white in color, the Blu di Capra presents typical gray-green veins, resulting from the maturation during aging of natural molds. The taste is extremely harmonious and satisfies even the most demanding palates.

È la sintesi perfetta tra un sapore delicato, frutto di un ricercato equilibrio tra il caratteristico sapore di latte caprino e la nota profumata dell’erborinatura, e caratteristiche nutrizionali importanti: alta digeribilità, basso contenuto di colesterolo, ottima fonte di proteine e calcio. Di pasta compatta, di color bianco avorio, il Blu di Capra presenta le tipiche venature grigio-verdi, frutto della maturazione, durante la stagionatura, di muffe naturali. Il gusto risulta estremamente armonico e soddisfa anche i palati più esigenti.
