The Morlacco is a cheese typically from Veneto, particularly from the pastures of Monte Grappa.
This peak became famous for the heroic events of the Great War; since the time of the Republic of the Serenissima, it had seen the settlement of Balkan peoples, shepherds, and woodcutters, who began to produce a simple cheese that took its name from the region of their origin: Morlachia.
It is a cheese made from raw semi-skimmed cow's milk and a rennet coagulation. For this reason, its aroma is so intense and its texture particularly elastic with a substantial eye formation.

It is a semi-mature cheese with a fairly elastic texture especially in the center, with a very pronounced hole structure and a firmer texture near the rind.
Strong aromatic notes of wild herbs such as dandelion and alfalfa. Cheese dedicated to a full meal with a tendency to melt on classic grandmother's polenta spread on the panara, in the Venetian style.
It pairs well with white wines such as Soave and Pinot Grigio.
