The Morlacco is a typical cheese from the Veneto region, particularly from the pastures of Monte Grappa.
This peak became famous for the heroic events of the Great War; since the time of the Republic of Serenissima, it had witnessed the settlement of Balkan peoples, shepherds, and woodcutters, who here began to produce a simple cheese named after their region of origin: Morlachia.
It is a cheese made from raw semi-skimmed cow's milk and a rennet coagulation. This is why its aroma is so intense, and its texture is particularly elastic with a consistent eye.

It is a semi-aged cheese with a fairly elastic consistency especially in the heart, with a very pronounced eye structure and a denser texture near the crust.
Strong aromatic note of field herbs such as dandelion and alfalfa. Cheese dedicated to the entire meal with a predisposition to melt on the classic grandma's polenta spread on the panara, Venetian style.
It pairs well with white wines such as Soave and Pinot Grigio.
