The name of this cheese always brings a smile and comes from an ancient Ladin term spretz tzaori which means tasty cheese. It is made from raw milk and is aged for about 90 days. Its rind always remains particularly humid. The milk comes from the Brown and Grey Alpine breeds that graze above 1000 meters.

The flavor of this cheese, as the name itself suggests, is quite particular and divides consumers. It is similar to another very famous product, which is Fontina DOP. Its rind always remains a bit moist, while the cheese's paste is particularly compact and creamy. The flavor pairs very well with speck Alto Adige and other smoked cold cuts. It is delicious melted over soft yellow polenta. Perfect when paired with an aromatic wine, especially if it has a typical smoky note, such as a good Soave di Fattori, even better.
