The name of this cheese always brings a smile and comes from a term in the ancient Ladin language spretz tzaori which means tasty cheese.
It is made from raw milk and is aged for about 90 days. Its crust always remains particularly moist. The milk comes from the Bruna and Grigio Alpina breeds that graze above 1000 meters.
