The Brown breed is one of the most prized for the production of Parmigiano Reggiano DOP. Valserena is a historic dairy in the municipality of Torrile, among the hills of Parma and the Po plain. A high-profile reality that works only with milk from this breed and hay of various types from its own reserves. Special attention is given to the welfare of the cows because, as they say in the company, if the cows are well, the milk will be better, and consequently, the cheese will be unrivaled! In this dairy, they produce 6 forms a day of Solo Bruna, each weighing 38 kg. We have chosen it with an important aging that yields great organoleptic results. Solo Bruna means the elite of Parmigiano Reggiano DOP and the guarantee of a cult brand within the denomination landscape.
Aging over 30 months allows us to say that this cheese is practically lactose-free, although it may contain some traces.

Great for succulent appetizers and delicious starters paired with a drop of Traditional Balsamic Vinegar of Modena. It has a nice aromatic intensity and a substantial persistence.
Ideal for classic method sparkling wines and for medium-structured white wines. Also excellent with red wines like Valpolicella DOC or Chianti DOCG.
