A Parmigiano Reggiano DOP made from the milk of a single breed of cows. The Brown breed is one of the most prized for the production of Parmigiano Reggiano DOP. Valserena is a historic dairy in the municipality of Torrile among the hills of Parma and the Po Valley. A high-profile reality that works exclusively with the milk of this breed and its own variety of hay. Special attention is given to the well-being of the cows because, as stated by the company, if the cows are well, the milk is better and consequently, the cheese will be unmatched! In this dairy, 6 wheels are produced daily of Solo Bruna, each weighing 38 kg. We have chosen it at an important aging that yields great organoleptic results. Solo Bruna means the elite of Parmigiano Reggiano DOP and the guarantee of a cult brand in the landscape of the denomination. 

Aging over 30 months allows us to say that this cheese is virtually lactose-free, although it may retain some traces.

The Parmigiani are not all the same and the milk completely changes the taste profile. The Parmigiano Reggiano DOP from SOLO BRUNA is a product with a high organoleptic profile, featuring a very pleasant delicacy and floral olfactory notes. Furthermore, the aging we have chosen guarantees an excellent result from a tasting perspective. It has a beautiful creaminess on the palate with a very careful balance between sweetness and saltiness. Excellent cheese for platters with wildflower and acacia honey. Great for succulent appetizers and for tasty starters paired with a drop of Traditional Balsamic Vinegar of Modena or Reggio Emilia. It has a nice aromatic intensity and substantial persistence. Ideal for classic method sparkling wines and for medium-structured white wines. Excellent also with red wines like Valpolicella DOC or Chianti DOCG.
