A historic dairy that takes its name from the ancient Valserena Abbey where monks in the Middle Ages already produced a cheese very similar to the current one. The Brown breed is one of the finest for the production of Parmigiano Reggiano DOP. Valserena is a historic dairy in the municipality of Torrile, between the hills of Parma and the Po plain. A high-profile reality that works exclusively with milk from this breed and various owned types of hay. Special attention is paid to the well-being of the cows because, as they say at the company, if the cows are well, the milk is also better and, consequently, the cheese will have no rivals! In this dairy, 6 forms of Solo Bruna weighing 38 kg each are produced daily. We have chosen it with an important aging that yields great organoleptic results. Solo Bruna means the elite of Parmigiano Reggiano DOP and the guarantee of a cult brand in the landscape of the denomination. 

Aging over 30 months allows us to say that this cheese is practically lactose-free, although it may retain some traces.

The Parmigiano Reggiano DOP by SOLO BRUNA is a product of high organoleptic profile with a very pleasant delicacy and floral olfactory notes. Moreover, the aging process we chose guarantees an excellent result from a tasting point of view. It has a beautiful creaminess on the palate with a very precise balance between sweetness and saltiness. Excellent cheese for platters with millefiori and acacia honey. Great for succulent appetizers and tasty starters paired with a drop of Traditional Balsamic Vinegar from Modena or Reggio Emilia. It has a nice aromatic intensity and substantial persistence. Ideal for sparkling wines made using the classic method and for medium-structured white wines. It is also excellent with red wines such as Valpolicella DOC or Chianti DOCG.
