The grapes come from iron-rich, clayey soils typical of the Montello hills. The grapes are vinified in red and left to macerate for 15 days on their must. They are then aged in 2.5 ton Slavonian oak barrels for 12 - 14 months. The wine is then left for a short period in bottles before being marketed.
The "reccandini" wines were mentioned as early as the 1600s by De Agostinetti, an important Venetian botanist, and they were talked about as gentle wines, rich, with an intriguing pleasantness, particularly esteemed in the quality market of that time. Today, the Recantina grape has returned to being cultivated among the hills of Treviso, after a long period of oblivion. Ermenegildo Giusti wanted to dedicate two vineyards, in the Emily and Aria Valentina estates, to restore the ancient production of this historic wine. A surprise for those who have tried it. A wild character in the soul but an overall pleasant elegance and gentleness. In short, an intriguing wine that is worth trying!
The Recantina Augusto is a wine that offers multiple sensations to those who taste it. First of all, it has a wild spirit inside where all the characteristics of an ancient and rediscovered indigenous grape variety can be perceived. Then, in its aromatic expression, it offers pleasant and gentle fruity nuances of cherry, red renetta apple, red flowers, purple rose, and wild violets. On the palate, it maintains great freshness and a pleasant sensation of tannin that envelops and gives dynamism and smoothness to the palate. The finish is fruity of cherry and spicy of black pepper with a nice green sensation of fresh grass and underbrush.
A wine to be enjoyed slightly chilled to enhance the characteristics of red fruit, ideal for spicy appetizers, fatty and spicy cold cuts, with soppressa, lardo di Colonnata, pancetta steccata, with moderately aged cow's milk cheeses, with complex first courses based on meat. Excellent with grilled meats and cuts from limousine and charollaise.
