The Pomodorino del Piennolo del Vesuvio DOP should not be treated like all other tomatoes.
It is called piennolo because at its base it has a more or less pronounced stem; it can be recognized from imitations because when it opens, it has only two bands of lighter fiber and there are no scattered seeds.

How can we use it? First of all, don't put it in the refrigerator!
Keep it in a cool and not too humid place, maybe hung up. The cluster ripens, that is, the cherry tomato has the characteristic of slowly losing water and not rotting, thanks to its thick skin.
So don't worry if it shrinks even more... that's its goodness. At some point, dehydration will naturally stop.
Don't cook it too much when you put it in the pan: just give it a quick sear, leave it nice and juicy, and don't squeeze it in the pan. Delicious if you use it to toss Gragnano IGP pasta with shrimp or scampi. Fantastic with red shrimp from Mazara del Vallo. If you try it, you will never want to part with it!
