PROCESSING

After vinification, entirely carried out with pneumatic pressing of whole grapes, the cuvee is made in the following spring. Here, 10 to 15% of wine aged for six months in barriques, of 3rd and 4th pass, and the liquer de tirage are added. After the dégorgement, the bottle is dressed and undergoes a refinement of six months before commercialization.

The Franciacorta DOCG Brut Millesimato in a Magnum bottle of 1.5 liters perfectly complements elaborate dishes based on fish and white meats, for example, with sauces and broths, but without tomato.

TASTING

It is a full golden yellow color with a slight hint of green, abundant mousse and medium-fineness perlage. The aroma features notes of bread crust, biscuit, and dried fruit (toasted almond) alongside more delicate hints of golden apple and pear. The taste is very smooth and lingers on the palate for a long time. The aftertaste is sharp and vibrant. It should be served not too cold, around 8 degrees.
