Obtained with partially skimmed milk coming from summer pastures, after coagulation and salting, it is left to mature at altitude inside tuff caves for 14 months.
The woods of Binatega are famous for their alpine biodiversity and are located in the Agordine Alps in the province of Belluno in Veneto. Here, rich pastures filled with aromatic herbs and flowers enhance the aromatic component of this cheese made with summer milk. This cheese has won numerous awards in various editions of National Competitions for high mountain cheeses.
Cow's milk, natural rennet, sea salt
Its texture is particularly compact and, if left to mature, it can also be used for grating. Excellent and ideal, as the tradition of shepherds suggests, with some corn polenta. It is paired with traditional Venetian wines such as juicy Cabernet Sauvignon or Merlot from the Berici Hills.
