The Mimolette Vieille is a typical French cheese, one of the rare exceptions on our portal that looks outside of Italy. It is a cheese produced in the Lille region, in the northeast of France. A historic cheese: it has been produced since the 17th century!
Cheese made with whole cow's milk. Its texture is compact, free of holes, and orange in color. It has a sweet taste with delicate and not too intense aromas, even though it is a semi-aged cheese.
The typical orange color of this cheese comes from a natural coloring agent: annatto. Annatto is a yellow-reddish pigment derived from carotene and extracted from the Bixa Orellana plant, a wild plant from the Amazon that is primarily cultivated in Central America and India.
The Mimolette Vieille (which we present on this page in a 500-gram portion) is a delicious cheese, enjoyable at any time of the day: as a breakfast, a snack, or at the end of a meal. It can also be grated to prepare tasty recipes.
It is also a cheese for a cheese board, making it perfect as an appetizer. It pairs well with a full-bodied red wine or with a Chuche-mourette (an aperitif based on juniper brandy) or a Belgian double malt beer.
