The Parmigiano Reggiano DOP made from only Bruna cows is a product with high organoleptic profile, featuring a delightfully pleasant delicacy and floral olfactory notes. It is an even more nutritious Parmigiano with a unique and distinctive flavor. The added value of the Bruna comes from the significant contents of fat (4%) in the milk of this type of cow and especially from protein (3.8%): a combination not found in any other breed in the world.

Double Protection

The Parmigiano Reggiano DOP made from only Bruna cows is regulated by two Consortiums and has a double protection: that of the DOP and that of the designation “made from only Bruna cows”. The latter is registered by a consortium that operates to promote and carry out activities aimed at enhancing, protecting, and disseminating typical products derived from Brown cattle registered in the national genealogical book, performing periodic checks on the production protocols, the cows, and the organoleptic characteristics of the milk produced.
