In fact, the product is at the limit of denaturation and brings with it unique characteristics: tasting it, one can clearly perceive a toasted aftertaste, sometimes bitter, which makes this Parmigiano Reggiano a food for refined palates and highly sought after for unusual pairings. Such a long aging results in its almost total absence of lactose, making it a digestible food for those who are intolerant.

Really excellent when paired with sweet and fortified wines. Interesting alongside a craft beer, perhaps a double malt.
Refined when tasted with a few drops of Balsamic Vinegar from Modena.
