The Pecorino Riserva Latte Crudo is a fresh cheese, with a short aging period, salted and semi-hard, with a pearl color, and it is produced as families of shepherds and cheesemakers did more than a hundred years ago: taking the sheep to the pasture, using natural rennet, and, above all, not pasteurizing the milk.
This cheese has remained faithful to ancient and traditional recipes, always respecting modern production regulations. The milk obtained from the herds is processed fresh at a temperature not exceeding 40 degrees, thus preserving the aromas and flavors of the pasture. The wheels are left to age for a minimum of 60 days on wooden boards, after which they are washed and brushed.
