Sheep cheese is wrapped in fig leaves which ensure better preservation and, above all, release their whey that hardens the crust and gives it a pleasant floral sensation.
Subsequently, the pecorino thus wrapped is left to mature inside used French oak barriques that previously contained wine suitable for Amarone della Valpolicella DOCG.
The uniqueness of this cheese is not only due to the fact that it is aged wrapped in fig leaves, but especially because the aging period takes place entirely inside used barrels from Valpolicella. At the end of the maturation, the vegetal sensations of fig delicately blend with the winey and vanilla notes of the French oak wood. Very intriguing.
