The Manghito is a creamy tomino trilatte made from cow, goat, and sheep milk, produced by the Caseificio dell'Alta Langa and subsequently aged with mango and licorice and kept in an airtight glass container for a week by Giuseppe Bernardinelli from I Sapori del Portico.
The entire sweetness of the licorice and the intriguing exoticism of the mango intoxicate the creamy paste of the little tomino made with white flower. An exciting flavor that carries with it all the art of aging and the great passion of Giuseppe Bernardinelli.
The Manghito is an exciting cheese and is great to enjoy as an appetizer before a romantic dinner or at the end.
A great pairing is smoked salmon sliced thinly like carpaccio, or some amaretti to sweeten the meal together with a bit of Modica chocolate.
For pairing, we suggest a delicate Lugana or a more intense Passito di Pantelleria.
The crust is completely edible.
