A tasty tribute by Corrado Benedetti to the wine traditions of his land: the Coppa Affinata all'Amarone della Valpolicella is the result of processing selected meats from local pigs, characterized by the perfect balance between lean parts and fat that gives it the characteristic marbling.
After the aging of over 12 months, the coppa is refined through an immersion in Amarone for about twenty days, then it is removed and dried before continuing the aging for another month.
The Amarone thus gives fragrance and softness to the coppa, which absorbs the typical scents and colors of Amarone.
