Ulderico Rosso is undoubtedly the flagship product of Cantina Ronca. A complex wine, significant as it combines power and elegance. Overall, it is a wine of extreme refinement that is well-suited for great occasions.
The main characteristic that most represents this wine is the enveloping warmth experienced from a sensory perspective: it indeed evokes warm, welcoming, and familiar atmospheres.
Made only with the best bunches of Corvina and Merlot; grapes that have been trained using GDC and Trentino pergola on a morainic type soil located south of Lake Garda. The dried grapes undergo destemming and soft pressing. The pressed grapes are then inoculated with selected yeasts in stainless steel containers, and fermentation continues slowly at low temperatures to best extract the color, tannins, and flavors from the skin. Aging occurs for at least 12 months in contact with the yeasts, in temperature-controlled stainless steel tanks. A portion is instead aged in barrique.
The Ulderico Rosso Veronese IGT has a structure that withstands and supports the finest culinary pairings such as wild game and braised dishes. Its strong and refined personality also allows it to be enjoyed on its own as a meditation wine, akin to an Amarone della Valpolicella DOCG.
The color is impenetrable red and on the nose, we find a wide aromatic range that spans from blackberry jam to cherries in spirits, then leaving room for evident toasted notes of coffee, dark chocolate, vanilla, and cinnamon. On the palate, it is perfectly balanced, warm, and silky.
