The Ulderico Rosso Dolce is undoubtedly one of the flagship products of Cantina Ronca. Thanks to the appassimento process that has concentrated its sugars, it is an inebriating nectar suitable for festive atmospheres.
The Merlot grapes used to produce this wine are cultivated in GDC, with a production of about 3.5 kg per plant. The soil is of morainic type located south of Lake Garda.
The dried grapes undergo destemming and gentle crushing. The crushed grapes are then inoculated with selected yeasts in stainless steel containers, and the fermentation proceeds slowly at low temperatures, in order to best extract the color, tannins, and aromas from the skin. The aging lasts at least 12 months in contact with the yeasts, in temperature-controlled stainless steel tanks. A portion is aged in barriques instead.
The Ulderico Rosso Dolce pairs very well with Pandoro, the typical Veronese dessert that is traditionally consumed during the Christmas season. It is also great when served together with well-aged cheeses and bitter dark chocolate, like that from Modica.
The wine has a deep garnet red color. On the nose, the aroma is intense, featuring notes of ripe red fruit, pansy, and spices. On the palate, its structure and alcohol content are accompanied by a residual sweetness that makes it sweet, warm, velvety, and enveloping. It has a long aromatic persistence of fruit in jam.
