For its production, Piedmontese milk and flowers of Cynara Cardunculus, a wild thistle that grows wild throughout the Mediterranean basin are used.

The long aging, over 12 months, has allowed the product to be lactose-free, even obtaining Halal certification, essential for the Muslim world and for exporting to Arab and Asian markets. It is characterized by delicate and never intrusive aromas with a grainy texture of excellent consistency.
