The Smoked Stewed Rack is a cooked and smoked product with natural beech wood smoke that gives it a clean aroma and a pleasant roasted fragrance.
The natural smoking process gives the meat a characteristic light pink color with a golden edge and a balanced flavor with slight aromatic notes.
The rack, also known as loin, includes ribs and tenderloin. Traditionally, with two or more whole racks, it is possible to create "crowns" and "honor guards", two variations used in Italian haute cuisine.
The Smoked Stewed Carrè is used to prepare delicious and elegant main courses, it can be cooked with potatoes and onions, but also with thyme, pea cream, curry, arugula, and parmesan.
