The smoked stewed pancetta is a fresh cold cut product made from lean pancetta, devoid of cartilage and smoked with natural beech wood smoke, packaged in a vacuum.
The smoked stewed pancetta has a pink color for the leaner part, interspersed with white strips of fat; its aroma is clean and intoxicating, and its spices add a soft and fragrant note.
The pancetta is salted through brining to make it even more flavorful and appetizing. After salting, the pancetta is artisanally processed for at least 24 hours, cooked in saturated steam ovens, and smoked with beech wood to give it a natural golden color.
The pancetta can be used in pasta all’amatriciana, although the traditional version calls for guanciale, by those who do not like strong flavors but prefer smoky ones.
The stewed bacon is one of the tastiest and most delicious ingredients, and it’s great for flavoring first courses, like spaghetti or tagliatelle, but also for filling sandwiches or preparing the classic English breakfast with eggs and bacon.
