The smoked stewed pancetta is a fresh cold cut product made from lean pancetta, free of cartilage and smoked with natural beech wood smoke and vacuum packed.
The smoked stewed pancetta has a pink color for the leaner part interspersed with white strips of fat, its aroma is clean and intoxicating, and its spices add a soft and fragrant note.
The trimmed pancetta is salted through brining to make it even more tasty and appetizing. After salting, the pancetta is artisanally processed for at least 24 hours, cooked in saturated steam ovens, and smoked with beech wood to give it a natural golden color.
The pancetta can be used in all’amatriciana pasta, although the traditional version calls for the use of guanciale, by those who do not particularly like strong flavors but prefer smoked ones.
