Smoked stewed bacon is a fresh cured meat product made from lean bellies, free from cartilage and smoked with natural beech wood smoke and packaged under vacuum.
The smoked stewed bacon has a pink color where the lean parts are alternated with white streaks of fat, its aroma is clean and intoxicating, and its spices add a soft and fragrant note.
The trimmed bacon is salted through brining to make it even more flavorful and appetizing. After salting, the bacon is handcrafted for at least 24 hours, cooked in steam-saturated ovens, and smoked with beech wood to give it a natural golden color.
Bacon can be used in pasta all'amatriciana, although the traditional version requires the use of guanciale, for those who do not like strong flavors but prefer smoked ones.
