The Pancetta Salamata falls into the category of aged salami. The Pavoncelli Salumi factory prepares it according to the recipe of Ernesto Pavoncelli, who, changing the traditional perspective, provides for the pancetta to be mixed within the dough. This way, the slice is more balanced and tender on the palate; the taste is also sweet and pleasant, maintaining all the aromas and characteristic flavors of pancetta and sopressa.
It is prepared using only and exclusively pancetta, separating the fatty part from the lean part in a distinct manner, cut and chopped with the knife-point technique. In the end, it is mixed with an original seasoning of salt, spices, and aromatic herbs.
After several months of aging, the salami pancake Pavoncelli is perfect as a board proposal, to be paired with bold and persistent wines, beers, and cheeses.
