The Prosciutto Cotto Brioso from the Salumificio Pavoncelli is a product classified as high quality, originally made from selected thighs, seasoned with spices and aromas, steam-cooked and vacuum packed and pasteurized.

Prosciutto Cotto: Historical Notes

The cooked ham has a long history and tradition, dating back to ancient Rome, where traces of recipes for processing pork have been found. The cooked ham is nothing more than a “large roast,” and its discovery is attributed to the Romans who, during the wars in Northern Europe, sought to facilitate the cooking of the roasted pork thigh by boiling it in water and spices.
Its production requires several essential phases: the selection and slaughtering of the pig, the processing of the hind leg, steam cooking, and packaging.

Prosciutto Cotto: Nutritional Values

The cooked ham is not only a source of protein but is also rich in zinc, iron, minerals, and B vitamins, making it a complete food from a nutritional point of view. The energy contribution to our bodies varies based on the amount of fat retained during the debone process.
How can you tell if a ham is of good quality or not? Quality depends on the amount of water present in the meat; specifically, the more humid the ham, the lower the quality.
You also need to be careful about what you buy; often, the cooked ham is replaced by a similar but lesser quality product: the cooked pork shoulder.

One Cooked Ham, Three Different Qualities

You may not know that, following a decree from the Ministry of Productive Activities in 2005, there are three categories of this cured meat that reflect three levels of quality. The one simply called “cooked ham” is the basic product, made from the processing of pork thigh. All hams with a moisture level less than or equal to 81% fall into this category.
The second category is called “selected cooked ham,” to qualify for this classification, at least three of the four primary muscles of the pork thigh must be visible, and its moisture level must be equal to or less than 78.5%.

The third category is represented by the “high quality cooked ham” which, unlike the selected one, is more prized and sought after as it requires the use of the boneless thigh: its processing results in ham with a moisture level below 75.5%.
