The cheese Ubriaco di Raboso from La Casearia Carpenedo is the first creation of Antonio Carpenedo among his Cellar Cheeses, dated as far back as 1976, and which gave rise to the Ubriaco brand. A 40-year-old success during which experimentation and the compromise with high quality have never ceased.
The Ubriaco di Raboso is a cow's milk cheese and has a rind that takes on the classic wine color, a testimony to the careful soaking methodology that transforms the paste into a rich yellow with rare small holes.

The cheese Ubriaco di Raboso from La Casearia Carpenedo (which we present on this page in a 380g approximately quarter) has a delicate humidity, the result of the evolution of the paste during aging, and a semihard and compact consistency.
It tends to crumble, which is why it is suitable to be served in flakes as it matures. It pairs perfectly with polenta, a crunchy piece of bread, and is excellent with Radicchio Rosso from Treviso, a unique territory combination.
The Raboso Ubriaco cheese from La Casearia Carpenedo offers fruity notes of wild blackberry and marasca. The wine notes are delicate and persistent, enveloped in a mild yet pronounced slightly spicy flavor.
A medium-bodied red wine (also from Veneto if we want to stay in the production area) is perfect!
This extraordinary cheese is a poetry of aromas beautifully combined: milk and wine together offering a sensory experience that brings you back to the simple, the true, the healthy. An experience that has convinced various juries. In fact, it has won the Golden Spike in 1996, 2nd place at Caseus Veneti 2013, 3rd place at Alma Caseus 2014, and bronze at the World Cheese Awards 2015-16.
