Baronerosso drunk with goats at Barbera in full

The cheese Baronerosso drunk goat cheese with Barbera from La Casearia Carpenedo is a unique cheese. The noble art of Antonio Carpenedo in soaking the cheese could not "spare" that of goat and he used a noble wine that pays homage to the great region of Piedmont: Barbera.

The Baronerosso has a harmonious appearance that strikes. The gentle curves of the rind and the basketweave texture stand out in the ruby red color. The Barbera pomace dominates the crust and the paste is uniform, perfect, of a bright white.

Baronerosso with Barbera: Awards Won

As a testament to the skill and quality, in November 2014 Antonio Carpenedo received the silver medal at the World Cheese Awards for the goat Baronerosso, being the first Italian in the competition. A recognition of the passion and love for pursuing excellence and quality.

Baronerosso drunk with goats at Barbera in full: use in the kitchen

The cheese Baronerosso drunk goat cheese with Barbera by La Casearia Carpenedo (which we present to you whole on this page) offers a refined elegance of dark fruit that envelops the pronounced character of goat's milk. Mineral hints. The aftertaste is persistent and pleasant. Undoubtedly a meditation cheese, to be experienced alongside a Barbera or a Burgundy red.

Tasting

The Baronerosso has a semi-hard consistency, with unique characteristics due to the changing properties of the paste under the influence of Barbera wine. Intense and rich on the nose, it is both concentrated and harmonious: flowers and young fruits gradually give way to the typical notes of goat's milk, balanced by the soaking method. Hints of hay and spices.

Tasting notes

Note di fieno e spezie.
