The Pecorino al pepe Ubriaco di Nero d'Avola from La Casearia Carpenedo is Antonio Carpenedo's tribute to a land rich in tradition and strong flavors, Sicily.
The province of Enna is the origin of the sheep's cheese, enriched with whole pepper, then aged and refined in the caves of the Treviso-based company.
After a minimum aging of 4 months in the cave, the process continues inside tanks containing the pomace of the prestigious Nero d'Avola wine, renowned and known as the guardian of Sicily and its flavors.
The Pecorino al pepe Ubriaco di Nero d'Avola by La Casearia Carpenedo (which we present on this page in a quarter of a 2kg wheel) is a sympathy of aromas that invades the sense of smell: berries, spices, and balsamic notes. The intense aroma of sheep's milk is balanced with the hints of wine and the spicy flavors of peppercorns. It has a taste with notes of berry, cherry, and plum, presenting spicy and balsamic notes. All in harmony with the flavors of the pastures. A great meditation cheese to pair with great aged red wines.
Cheese made from sheep's milk in a cylindrical shape with a crust of ruby colors. The paste is pale white and dotted with whole peppercorns and infiltrations of Nero d'Avola wine that make this cheese spectacular when cut. Semi-hard cheese, with a slight softness and an elastic note.
