The Pecorino al pepe Ubriaco di Nero d'Avola from La Casearia Carpenedo is Antonio Carpenedo's tribute to a land rich in tradition and strong flavors, Sicily.
The province of Enna is the origin of the sheep's cheese, enriched in paste with whole pepper, then aged and refined in the caves of the Treviso company.
After a minimum aging of 4 months in the cave, the process continues inside tanks containing the pomace of the prized Nero d'Avola wine, renowned and known as the custodian of Sicily and its flavors.
The Pecorino al pepe Ubriaco di Nero d'Avola from La Casearia Carpenedo (which we present here in a 1kg portion) is a symfony of aromas that fills the nose: berries, spices, and balsamic notes. The intense aroma of sheep's milk is balanced with the scents of wine and the spiciness of peppercorns. It has a taste with hints of berry, cherry, and plum, and presents spicy and balsamic notes. Cheese made from sheep's milk in a cylindrical shape that has a crust of ruby tones. The paste is pale white and speckled with whole peppercorns and infiltrations of Nero D'Avola wine, making this cheese spectacular when cut. It is a semi-hard cheese with a slight softness and an elastic note.
