The smoked raw bacon has a pink color with lean parts alternating with white strips of fat, its aroma is clean and intoxicating, and its spices add a soft and fragrant note.
The bacon can be used in pasta all’amatriciana, although the traditional version calls for the use of guanciale, by those who do not like strong flavors but prefer smoky ones.
