The cheese Fragolone from La Casearia Carpenedo is a truly special cheese: a provolone mandarino that is aged and then immersed in grape pomace and must with very fruity notes reminiscent of strawberry. This process is part of the Ubriaco method by Antonio Carpenedo and imparts unique aromas and flavors to this stretched curd cheese of ancient origins.

The particular processing leaves residues of vinaccia on the rind and gives the rind a burgundy hue. The paste is light yellow with uneven holes. It is a stretched curd cheese made with raw cow's milk and has a semi-hard consistency. The aging of at least 4 months enhances the spicy part, well balanced by the buttery and fruity notes of the grapes and the must. The notes of strawberry and honey stand out.
