The cheese Fragolone from La Casearia Carpenedo is a truly unique cheese: a provolone mandarino that is aged and then immersed in pomace and must with very fruity notes reminiscent of strawberry. This process is part of the Ubriaco method by Antonio Carpenedo and imparts unique aromas and flavors to this cheese with ancient origins and a spun paste.
The particular processing deposits residues of pomace on the rind and gives the rind a garnet hue. The paste is light yellow in color with uneven holes. A spun paste cheese made with raw cow's milk, with a semi-hard consistency. The aging of at least 4 months enhances the spicy notes, well balanced by the buttery and fruity aromas of the grape and must. The notes of strawberry and honey stand out.
The cheese Fragolone from La Casearia Carpenedo (which we present on this page in a quarter shape of about 2.5kg) is a very flavorful cheese, with light spicy notes pleasantly fruity thanks to the type of grapes, must, and wine used.
