The cheese Cuor di Noce vaccino from La Casearia Carpenedo is very special and perfectly describes the passion that Antonio Carpenedo has for dried fruit, specifically nuts.
To create this specialty, Antonio started from a wheel of cow's milk cheese made with pasteurized milk and aged for 6 months. Then the wheel is aged for a variable time inside barriques with walnut leaves.
The cheese Cuor di Noce vaccino by La Casearia Carpenedo (which we present on this page in an eighth of a form weighing about 300g) is a cheese with a full and aromatic flavor and a persistent nutty aftertaste.
It is ideal for cheese boards from Veneto to be paired with mostarda or acacia honey.
