To create this specialty, Antonio started with a wheel of cow's milk cheese made with pasteurized milk and aged for 6 months. Then, the wheel is matured for a varying period inside barrique with walnut leaves.
The cheese Cuor di Noce vaccino from La Casearia Carpenedo (which we present on this page in half form of about 1.25kg) is a cheese with a full and aromatic taste, with a persistent walnut aftertaste.
It is ideal for cheese boards from Veneto to be paired with mostarda or acacia honey.
A slightly soft structured white wine or a structured red wine made from dried grapes, such as Ripasso, is recommended.
