The cheese Capo di Stato from La Casearia Carpenedo embodies the richness of knowledge, passion, and sharing. All within reach of two hands. One holds a glass of Capo di Stato, and the other a slice of drunken cheese in this Treviso wine that has become a legend. The Capo di Stato wine delights our palates only in the best vintages: it originates from the selection of the historic vineyard from 1946 of the winery Loredan Gasparini, composed of “100 plants,” where the microclimate of Montello imparts a distinct personality. This particular Rosso di Venegazzù is a special reserve produced each year in limited edition, highly sought after and appreciated by significant connoisseurs, including those from the political world.
The Capo di Stato cheese is made from raw cow's milk from high mountain sources. There are 24 months of minimum aging for this unique reserve. It is then matured by immersion in the pomace of the prestigious Veneto wine. The result is a cheese that hides its true essence, elegance, and balance from only the distracted. Once the long process is complete, the wheels are vacuum packed and placed inside a cotton bag that protects them from light.
Its fame stems from a famous gaffe, which occurred in Venice in 1967, when the French general and president Charles De Gaulle was visiting for the Biennale. At the Gritti Hotel, he was served a Venegazzù Rosso and praised it as “extraordinary Bordeaux.” It was the international consecration of a wine born in the heart of the Alta Marca Trevigiana, which from that moment took the name Capo di Stato.
The cheese Capo di Stato from La Casearia Carpenedo (which we present to you in its whole form on this page) is a hard, grainy and moist cheese. It will undoubtedly be the star of your cheese boards, alongside other aged cheeses, perhaps from the mountains. The intense flavor that comes from aging indicates how great it is to pair with structured red wines, such as an Amarone DOCG from Valpolicella.
Cylindrical shape, with straight sides and flat faces, rough crust with remnants of grape pomace. The color is irregular and has a characteristic spotted appearance of grape pomace. In the paste: presence of small irregular holes. On the nose, we perceive sensations of red fruit typical of the Capo di Stato wine, and in the mouth, it is particularly melt-in-your-mouth, with a juicy wine sensation.
