The Hazelnut from Piedmont IGP toasted by Cascina Fontane is a semi-finished ingredient of absolute excellence for your pastry creations. It has the appearance of a thick spreadable cream, but should not be consumed alone and has nothing to do with spreads or pralines. It should also not be confused with peanut butter, which is made by blending peanuts, which are not hazelnuts.
The Alta Langa is the natural home of an excellent variety of hazelnuts, belonging to the species Corylus Avellanae: the Tonda Gentile Trilobata, which has held the title of “Protected Geographical Indication” since 1993. Cascina Fontane exclusively produces Piedmont I.G.P. Hazelnuts, which due to their distinctive properties are the most sought after by the confectionery industry, and are universally regarded as the best in the world.
Cascina Fontane performs the roasting of its fantastic hazelnuts using the patented method called “Vertiflow”. A stream of hot air allows the product to be suspended, causing it to rotate on itself: this ensures an even cooking of the hazelnuts. Furthermore, these, fully dehumidified, are perfectly cooked inside for a significantly more fragrant taste.
A process that does not affect the flavor of the product and completely cleans the fruits while preserving their oily component in the final phase, that of sorting.

The toasted Piedmont Hazelnut IGP paste from Cascina Fontane is an excellent ingredient for making ice cream, for filling cakes, and it is the main ingredient for creating spreads, pralines, and chocolates.
Exceptional for creating incredible hazelnut semifreddos, but also for confetti and torrone.
Unlike the roasted hazelnut which is a raw product, free from preservatives or stabilizers, and requires care to maintain its chemical, physical, and organoleptic characteristics, hazelnut paste has a much more stable shelf life of up to one year from the date of production.
