The Col de la Bastia Valpolicella DOC Ripasso Superiore from Azienda Agricola Fattori is a high-quality dry red wine, produced from the extraordinary grapes grown in the vineyards located in Bastia, the watershed between the Val d’Alpone and the Val d’Illasi, a hilly area in the province of Verona.

Alcohol content: 14.5% vol.

The Valpolicella Ripasso Superiore is a wine that originates from a blend of grapes coming from different vineyards, the most important of which is Corvina (65%); then there are Rondinella (10%), Corvinone (15%) and other non-essential vineyards that appear in various percentages, up to a maximum overall of 25% and a maximum of 10% for each variety.

The particularity of the Ripasso lies in the processing method: before aging in the barrel, the Valpolicella wine is poured directly into the tanks where the Amarone has been previously pressed, letting it rest there, in contact with the freshly pressed pomace, for a period ranging from 15 to 20 days. In this way, the wine receives from the dried pomace part of the aroma that is characteristic of the Amarone, thus creating a new wine, quite unique.

The Col de la Bastia Valpolicella Ripasso Superiore DOC from the Azienda Agricola Fattori is ideal for antipasti based on cheese.

It is also excellent for accompanying main courses of meat in general and pairs perfectly with some first courses such as egg pasta with ragù or a more rustic pasta e fagioli, a typical dish from Verona.

Tasting notes

This still red wine is characterized by a very dark ruby red color. The aroma, which is completely distinctive, is wine-like and features aromatic notes reminiscent of cherry and small red berry fruits. The taste, on the other hand, velvety and full-bodied, is delicately tannic and balanced, presenting fresh notes of red fruits and, at times, an aftertaste of toasted, tobacco, and vanilla.

The ideal serving temperature is around 16-18°C and the recommended type of glass is a very wide red wine glass that, allowing the wine to oxygenate, gives the aromas the opportunity to release all their intensity.
