The Col de la Bastia Valpolicella DOC Ripasso by Azienda Agricola Fattori is a dry red wine of the highest quality, produced with the extraordinary grapes grown in the vineyards located in the Bastia area, the watershed between the Val d’Alpone and the Val d’Illasi, in the heart of Valpolicella, a hilly area located in the north-western part of the province of Verona.

Valpolicella is a wine that originates from a blend of grapes from different vineyards, the most important being Corvina (65%); then there is Rondinella (10%), Corvinone (15%), and other non-essential vineyards that appear in various percentages, up to a maximum of 25% overall and a maximum of 10% for each variety.

The particularity of Ripasso lies in the processing method: before aging in barrel, Valpolicella wine is poured directly into the tanks where the Amarone has been previously pressed, leaving it there to rest, in contact with the freshly pressed pomace, for a period ranging from 15 to 20 days. In this way, the wine absorbs part of the aroma that is typical of Amarone, thus creating a completely unique wine.

This still black wine is characterized by a very dark ruby red color. The aroma, quite characteristic, is wine-like and presents aromatic notes reminiscent of cherry and small red berries. The flavor, on the other hand, is velvety and full-bodied, delicately tannic and balanced, and features fresh notes of red fruits and, at times, an aftertaste of toasted, tobacco, and vanilla.

The Col de la Bastia Valpolicella DOC from the Azienda Agricola Fattori is ideal for appetizers based on cheese. It is also great for pairing with main courses of meat in general. It perfectly complements some first courses like egg pasta with ragù or a more rustic pasta and beans, a typical dish from Verona. The ideal serving is at a temperature of around 16-18° C and the recommended type of glass is a very wide red wine glass that, allowing the wine to oxygenate, gives the aromas the opportunity to release their full intensity.
