The Morlacco is a typical cheese from the Veneto region, particularly from the alpine pastures of Monte Grappa.
This peak became famous for the heroic events of the Great War. Since the time of the Serenissima Republic, it had seen the settlement of Balkan peoples, shepherds, and woodcutters, who began to produce a simple cheese named after the region they came from: Morlachia.
It is a cheese made from semi-fat raw cow's milk and a rennet coagulation.
For this reason, its aroma is so intense and its texture particularly elastic with a consistent eye.

It is a semihard cheese with a fairly elastic texture especially in the heart, with a very pronounced eye formation and a more compact texture near the rind.
Strong aromatic note of field herbs such as dandelion and alfalfa. This cheese is dedicated to being served throughout the meal with a tendency to melt over the classic grandma's polenta served on the panara, in the Veneto style. It pairs well with white wines like Soave and Pinot Grigio.
