The spicy Palzola is a must in the landscape of Italian blue cheeses and features a compact paste with a particularly dark and well-distributed veining.
Great for melting over a nice hot and soft yellow polenta in the pure style of Northern Italy, to fill Gorgonzola and walnut ravioli, to pair with dried fruit and dried figs for tasty appetizers. Additionally, ideal with a drop of wildflower honey.
It has a nice spiciness but maintains a particular and elegant creaminess and an initial sweetness that ends with an intriguing almond-like sensation of dried fruit.
To enjoy it with a wine, soft and tendentially sweet wines are recommended, such as Passito from white grapes and Recioto di Soave DOCG.
