The Casara is located at the foot of the Lessini Mountains, among the highest hills of the appellations del Durello DOC and Soave DOC. White grapes for white wines. The former is made from Durella grapes, which were once called rabiosa or cagnina due to their acidity.
The Garganega for Soave is instead a native grape typical of the Verona area, the most known and cultivated. With the two wines and their pomace, it is used to age the cow's milk cheese produced with the same technique as Monte Veronese DOP.
It has a maturation period of 8 to 19 months. The aging in the pomace and wines implies absorption that penetrates centripetally towards the center of the cheese, imparting typical organoleptic characteristics.
